The Opuntia cactus, also known as the Prickly Pear bears this beautiful fruit that is edible, although it must be peeled carefully – you certainly don’t want to ingest the spines!, In Mexico, prickly pears are often used to make a variety of dishes from appetizers to desserts and beverages. A prickly pear margarita is one of my favs!
